Hello Vegan Lovers! Here is a little recipe for you!
Cooking time - 1 hour serves 3 people

Treasure hunt
1 Zucchini
1 Pepper (yellow or red, whatever you prefer)
10 Cherry Tomatoes
1 Cup of Quinoa
1/3 Cup of Fresh Orange and Carrot juice mixed ( Different vegetables give different quantities of juice, also depending on whether you grate it by hand or use a juicer you may have more or less juice.
When cooking your 1 cup of quinoa you will require a total of 2 1/3 cups of liquide, so if you only get 1/3 carrot and orange juice like I did then compensate the rest with water! In this recipe I used 2 Cups of Water !
Drizzle of Olive oil , or coconut oil
Pinch of Salt and Pepper
2 Shallots
Quantity of grated carrots will depend on the size of your carrots! You will have different quantities of grated carrots to work with ! So just use however much your 3 carrots gives you.
Final add ons to this dish
You can eat it with no added sauce or you can go for a drizzle of balsamique , or a honey, soy and sesame oil sauce!
You can add feta cheese if your not vegan, olives, cucumbers...

Step One Preparing the Vegetables
Start off by washing all your vegetables!
Cut your zucchini, and pepper into cubes
Cut your cherry tomatoes in halves
Place them all on an oven friendly pan
Drizzle with Olive Oil and Salt & Pepper
Place in Oven at 180°C for an hour ( check up every 15 min to see the cooking evolution)
Step Two Preparing the Quinoa Sauce
Peel your carrots and grate them
Take a handful of grated carrot and squeeze out juice, if you have a juicer use it, but if you don't thats ok too!
Grate your orange and peel the pulp
Check up on your roasted vegetables
Step Three Cooking the Quinoa
Turn your stove on high heat ,
Pour 1 cup of quinoa, drizzle with olive oil,
Add the 1/3 cup of carrot and orange juice and 2 cups of water ( if you have more carrot and orange juice than add it and decrease the water, as long as its a total of 2 1/3 cups of liquide.)
Add a pinch of salt,
Add grated orange peel
Mix and wait till it starts to bubble this could take between 5-8 min
The rest depends on how crunchy you like your quinoa, I would then after 8 min turn down the heat put a lid and let it steam for 10-15 min at low temperature.
Once those 10-15 min are up add your grated carrot and orange pulp
Add a lid and let it sit off the stove for 5 min and then once the 5 minutes are up chuck it all in a bowl!
Puzzling The Final Step!
Dice the Shallots and then add them to the bowl of Quinoa!
At this stage if you want to add parsley, coriander, basil, feta, cucumber, mozarella... that is up to you to see what mood you are in! Just remember less is more and a little goes a long way! Sometimes the more ingredients you add results in a loss of flavour.
Anywaysss...I usually add the roasted vegetables at the end !
Final touch is to drizzle a little bit of balsamique vinegar and lemon juice but as mentioned above you could also add a soy, sesame oil, lemon and honey sauce!

Did you know.....
°That by adding a bit of lemon juice to your carrot juice, it will act as an anti-oxidant which means your juice will not turn brown but stay a bright vivid colour!
Good news is that orange juice or any other citric fruit will have the same effect!
This tip is great to keep sauces colourful or a juice or smoothies vivid!
