🥧Quiche-Mozarella-Spinach-Cherry and Sun Dried Tomatoes🥧

Preparation time: 10 min - Cooking time 1 hour- Makes 12 slices or 8 bigger ones!

Treasure Hunt


1 shallot ( you can use onions too whatever you prefer or have at hand)

10 cherry tomatoes

6 sundried tomatoes

1 mozzarella ball if your feelings naughty 2 balls!

1 cup of frozen/ fresh cooked spinach if your feeling adventures 2 cups

2 garlic cloves

A roll of puff pastry

6 eggs ( if its a smaller pan 4 eggs will do to!)

26 cm Pie pan the size of your puff pastry ( the pastry needs to be a bit bigger ex:32cm than your pan ex:26 cm pan). There are so many different sizes choose one that suits your wants the most!


°Adding more ingredients it will densify your quiche, so it depends what your looking for!


Puzzling


Cook the shallot in a frying pan on high heat!

Make sure it is stirred constantly, you can use a couple drops of the oil of the sundried tomatoes so it does not stick to the pan ( you can also use, butter, olive oil, choose whatever you prefer or have at hand...)!

Once the onions have turned translucent, set aside.

Cut the mozzarella into strips, set aside.

°some mozzarella is really watery so squeeze out any water, or else your quiche will be soggy!

Cut the sun dried tomatoes , set aside.

Cut the cherry tomatoes in halves, set aside.

Cook the spinach with crushed garlic clove in the pan you used for the onions. °I like to add some salt and sesame oil

°Spinach is high content of water so I would also squeeze out any water, set aside. Unless you use the creamy spinach


Put the puff pastry in the pan and poke it with a fork, cook it in the oven at 180°C for 6 minutes. Make sure your puff pastry is bigger then your pan so you can have a little crust on the edge of the pan. If your pan is larger then your pastry , I recommend not pouring your quiche filling to the top and leaving a bit of space!


Whisk the eggs so that they have lots of air in them!


Assemble (you can make it look pretty or ugly)


Fill the bottom of the pan with the puff pastry with

1. Shallots (cook)

2. Sun dried tomatoes

3.Mozzarella

4.Spinach (cooked with garlic and sesame oil)

5.Pour egg

6.Cherry tomatoes


Place pan into oven at 180° C for an hour depending on what pan you choose the deeper the pan and most likely the longer it will need to cook.


Add salt and pepper if you like, if you cooked with sun dried tomatoes watch out cause they are salty same with certain cheese you may add and olives! Always taste what you cook! !


Wait till it cools down and Voila !


Do not cut into it when it is still warm or your quiche will collapse!



++++++Fun fact about Quiches++++


Did you know...


You can make a quiche with anything you like or have in your fridge!


Here are a couple ideas of ingredients you could add :


°Cheese, Raclette or fundue cheese, drops of creamy goat cheese...


°Veggies mushrooms, corn, aspergus ( steam them) zuccini, peppers aubergines ( pre cook them with olive oil on high heat)


°Condiments, Olives ( Kalamata are great remember always remove the seed), Jalapeno's if your feeling spicy!


°Meat ( just make sure to season and cook it prior to putting it in your quiche) you could even marinate the meat ( chicken breasts, ground meat) with some soy sauce and sesame oil)


°Fish (I would not pre-cook the fish as it cooks super fast and no one enjoys an overcooked fish or crustacean!) Random ideas could be a salmon,shrimp or smoked fish quiche!


It is ideal for any outdoor activity snack , picnics and hikes as it's easy to eat and travel with!
