Red🍕Lentils🍕Pizza(Gluten-free)

❤️For all you Gluten-Free Lovers out there! Can also be made Veganlishous (just substract the cheese)

❤If you are feeling Wild and want to try something different here is a recipe filled with Proteins and Super Yummy!

❤️A small apology to some of my traditional Italian friends which might feel offended by this...but it's ok cause the deliciousness of it makes up for the offense!

Total Preparation time: 35 minutes, Cooking time 30 min

( + soak lentils for 4 hours ( or however long you have to spare but I recommend a minimum of one hour...the longer it soaks the better...)

Makes approximately 2 pizzas ( 1 big one and one smaller one)

Then again if you want more Pizzas just soak more lentils or make a thinner dough!

Treasure hunt

The Dough

3-4 cups / 300 gr of Red lentils or more if you want to make more pizza you will get a hang of the quantities as soon as you make your first pizza!

2 tea spoons of Salt

2 tea spoons of Oregano

2 tea spoons of Smoked Paprika

1 tea spoon of Chili

You can go nuts here, add cumin , coriander if you want to make it oriental tasting, or garlic ginger powder...

Possibilities are infinite, your mind is the limitation so go for it, have fun, if its grosse start over and just don't make the same mistakes!

Pre-heat oven at 180°C and have one baking sheet ready

The Sauce options

🍕I got lazy with this one and bought a Pesto Rosso alla Callabrese already made sauce from Barilla ( it's a red pepper pesto).

🍕You may already have your own special tomato sauce for pizza recipe!

🍕You could buy a tomato passata add 2 chopped raw garlic and a bunch of basil leaves, salt and pepper and let it sit, so that the flavours infuse...

🍕 You could also use a cooked tomato sauce ...

🍕If tomato sauce is not for you , you could put a bunch of vegetables like zucchini's and blend them into a paste and use that as a sauce...

❤️I will post in a near future more about my own tomato sauce recipes and home made pestos which are also great for pizza sauce options!

The Toppings

1 Mozzarella ball

2 soup spoons of Parmegiano

1 Shallot

A couple olives

7 Basil Leaves

Whatever you like you can add be it garlic, peppers, Rucola, butternut, mushrooms, grilled aubergines, fish, meat...

Pizza Puzzling

The Dough

I recommend that when you start your day in the morning you put your lentils to soak, anticipation is the key.So start by soaking your lentils for 4 hours, get rid of the water and put the lentils in a blender with 5 soup spoons of water and your spices.

🍕The key here is to create a thick cream like texture out of the blended lentils. Too much water will create a dough too watery... so I would gradually add water to the mix and see how it goes...

As the base of this Pizza is red lentils, you get super full super quick so I recommend trying to make the dough the thinnest possible, so the thinner you spread your dough the lighter your Pizza will be, I would go for as thin as a baking sheet!

To do this grab one baking sheet and pour your mixture and use a knife to spread the dough!

Cook in a preheated oven for 5minutes ( if you go extra thin and 10 minutes if you go a bit thicker, either way you will see the dough rise and know it's ready!

🍕Pop it out of the oven add your tomato or non tomato sauce

🍕Add your grated mozzarella and Parmegiano

!!!!WAIT!!!! IF YOU ARE VEGAN SKIP THE CHEESE

🍕Add your vegetable toppings! Sometimes adding uncooked basil leaves or rucola can give it a nice freshness to your pizza!

Cook in the pre-heated oven of 180°C for 15-20 minutes and it is ready!

❤️Enjoy every bite while it's hot or cold whatever makes you happiest !

Wishing you all an incredible day!
