❤️ Something Fun, light, refreshing and full of flavours! 🍉
Preparation time: 10-15 minutes, cooking time 3 minutes, Recipe for 3 people
Treasure hunt
🦐15 Decent sized stripped shrimp
( I added more because I love shrimp and there is never too many..)
Sesame oil , Soy sauce, Worcester sauce, Siracha and Sesame oil
3 Garlic cloves crushed
2 Shallots diced
🍉30 Watermelon squares (each guest)
9 small balls ( 3 for each guest) equivalent to two big balls of mozzarella
🍋2 Lemons ( 1 for decor the other for sauce)
A bouquet of fresh coriander
Salt and Pepper
Balsamique glaze or vinegar for decoration whatever you have at hand!
Olive oil drizzle

Chop up half of a baby Watermelon into bite sizes
Chop up the Coriander ( if you don't like coriander use parsley or basilic instead)
Chop up in thin dice the two shallots (only use one if its a rather large shallot)
Mix the above three ingredients in a rather flat but deep Tupperware.
Squeeze the juice of 1 freshly pressed lemon
Close the lid of the Tupperware and make it dance slowly by turn this Tupperware upside down and all around! So that the shallots, coriander, and watermelon gently get coated with one another.
Place this Tupperware in the fridge to keep it nice and cold !
Meanwhile its time to cook the shrimp! Place your shrimp in your hot high heated pan, crush your garlic and drizzle : The Sesame oil, Soy sauce, Worcester sauce, and Siracha ( see how spicy you want it).
They key to cooking shrimp is that you do not want to over cook these little guys or else they turn to rubber...
So as soon as they go pink I would cook them for another 3 minutes max.
You can even cut through one and check if its cooked through if you have a doubt. It's up to you if you want to let them cool down or eat them warm!
Slice your mozzarella into little dice, keep one final ball for decoration.
Slice the final lemon into slivers which will be used as decoration and to be squeezed onto your salad.
Ok it's time to plate it !
Start by putting your watermelon, coriander, and shallot mix in the middle of the plate, add the mozzarella, and the ball in the middle and decorate the outside with the shrimp!
You can also just chuck it all at once and screw the making it look fancy part!
I drizzled a bit of olive oil , added salt and crushed pepper, and if you have some balsamique glaze or vinegar you can add a tiny bit as well!
