Preparation time: 25 minutes and Cooking Time 1h15 -
Serves up to 18 nice sized slices but this really depends on how you desire to cut it!

Preheat oven at 180°C and butter up your springform pan
For the base
1 1/2 cups of blended cookies of your choice ( Petit Lu basic butter biscuit ill do, but you can choose Oreos, ginger... ) It's usually equivalent to 200gr of cookies.
50 gr of butter melted (1/3 cup)
1/4 cup sugar & a pinch of salt
For the filling
3x 200 gr Cream cheese (of your choice)
3/4 cup of Sugar
250 ml of sour cream
2 eggs
3 tsp of flower
260 gr of melted white chocolate of your choice ( "bain marie" style cooking)
1 tsp of Vanilla extract or one packet of Vanilla sugar
Straw-Raspberry Coulis
250 gr of Raspberries
and/or
250 gr strawberries the more the merrier but a pack of one
1/3 cup of sugar or a drizzle of honey
and
1/2 cup of water
🍰Puzzling it all together🍰
Step One
Mix in a blender you're cookies, and melt your butter on low heat .
Mix it all in a bowl with the sugar and pinch of salt!
Step Two
Make sure you springform cake is buttered up to a minimum, remove excessive butter with paper towel.
Press down the mixture you created in step one in the springform pan.
Step Three
Mix in a bowl the 3 packets of cream cheese, with the sour cream and slowly fold in your 2 whisked eggs( you do not want to whisk the eggs too much or this will create an omelette consistency cheesecake)
Add your 3 tsp of flour.
Melt your white chocolate whilst continuously mixing it in a bain marie, ( this is a way to cook chocolate so you don't burn it and turn it into clumps).
Add the white chocolate to the bowl mixture gently and softly cause Chocolate is delicate and beautiful...
Step Four
Pour step three's mixture in the pan where the cookie lives.
But only pour half the mixture for now.
If you read on I shall explain why...
Step Five
On high heat add your washed fruit, sugar (or honey) and water, let it all simmer and become one.
Step Six
Drizzle your coulis in your first layer of Cheesecake, I use chopsticks to draw swirls, and you can add food dye like I did in the picture above if you want to funk it up!
Drizzle your second layer of cream cheese mix and add your coulis!
Step Seven
Time to cook the cake, I usually cook it for one hour and fifteen minutes. This time can vary, but what you want is for the center to be set, so when you move it jiggles to a minimum.
I also recommend inserting a small pan with water in your oven, this will keep the air moist so that the cake doesn't crack!
Cool it down, cover it up ( well ,because cakes absorbe fridge flavours if not done).
Place that cheesecake in your fridge over night and enjoy it with people you love most! Add the coulis of fruits that you made as an extra spoonful when dishing out the slices!
